Registered Dietitian and Certified Specialist in Sports Dietetics, Niki Kubiak, has been working for 14 years in the Omaha area helping people effectively improve their health and achieve their potential. Niki competed for the UNO Maverick's Track and Cross Country teams from 1996-2000. Upon graduating, she completed her Dietetic Internship at the VA San Diego Healthcare System returning to Omaha in 2002 to supervise the OneWorld Community Health Center’s Special Supplemental Program for Women, Infants and Children. During this time, Niki competed in local triathlons including a Half Ironman and the Chicago Marathon in 2004, where she qualified to run the prestigious Boston Marathon in 2005. In 2006, Niki left OneWorld to focus her career towards Sports Nutrition teaching part-time for Creighton University’s Exercise Science Department and Wellness Program, speaking and presenting for local athletic clubs and teams, counseling individuals, and serving as a consultant for UNO Athletics until 2014. At that time, Niki assumed the role of the Director of Nutrition and Health at Infinite Sports World. Shhe now offers individual counseling services for both sports nutrition and weight loss, speaks to clubs and teams, educates ISW Athletes on eating to win, and blogs regularly for Live Well Nebraska. In addition, her heart for community nutrition keeps her involved working in the South Omaha community, and she is an active member of the Nebraska Academy of Nutrition and Dietetics – Omaha District where she served as President earning her the award of Emerging Dietetic Leader in 2016. Niki still carves out time to run and compete in local races to fuel her passion. Her ultimate goal is to help people successfully achieve their health, wellness and athletic pursuits by making nutrition changes that last.
